The Lettuce That Went to Space
Growing fresh food in space presents an enormous challenge.
Plants have to grow within limited space using carefully controlled light, water, nutrients, and environmental conditions.
NASA’s Veggie plant-growth system was developed to study how plants could be grown aboard the International Space Station.
And one of the crops chosen was Outredgeous red romaine lettuce.
In 2015, astronauts aboard the ISS harvested and ate some of the lettuce they had grown in orbit.
That made Outredgeous part of an important step toward understanding how astronauts might someday produce fresh food during long-duration missions.

Sun: Full sun to partial shade
Soil: Rich, fertile, well-drained soil
Planting Depth: Approximately ⅛ inch — barely cover the seeds
Spacing: Approximately 8–12 inches apart for mature plants
Germination: Approximately 5–10 days under favorable conditions
Water: Keep consistently moist for crisp, tender leaves
Harvest: Baby greens in approximately 25–30 days; mature plants around 50–60 days depending on conditions
Life Cycle: Cool-season annual
Growing Tip
For the deepest coloration, give Outredgeous plenty of bright light while keeping plants cool and evenly watered.
Like most lettuce, it performs best during the cooler temperatures of spring and fall.
For a continuous harvest, sow another small batch every 2–3 weeks rather than planting the entire packet at once.

Why Are the Leaves So Red?
Outredgeous gets its dramatic coloration from plant pigments called anthocyanins.
These naturally occurring pigments create red, purple, and blue coloration in many plants—including blueberries, purple cabbage, blackberries, and red lettuce.
Color intensity can vary depending on genetics and growing conditions, particularly light and temperature.
So those beautiful burgundy leaves aren’t painted red.
